Rosyjskie Zrazy Ziemniaczane / Russian Potato Cutlets Stuffed with Mushrooms


Dzisiaj rosyjska wersja zrazów, które u nas kojarzą się raczej tylko z mięsem.

Dzisiejsza wariacja zrazów posmakuje wszystkim lubującym się w naszej rodzimej kuchni, w ziemniakach, cebuli i grzybach :) Dla mnie to coś niby znanego, ale w zupełnie nowej odsłonie. Polecam szczerze!

Podawałam z wegańską śmietaną na bazie tofu. Przepis znajdziecie na końcu, przed zdjęciami z procesu powstawania wszystkich pyszności :)


Składniki na 8 sporych zrazów:
  • 1kg ziemniaków
  • 350g pieczarek lub innych grzybów
  • 1 średnia cebula
  • 2 ząbki czosnku
  • 1 łyżeczka natki pietruszki
  • 1 łyżka mąki ziemniaczanej
  • 1 łyżka mąki Twojego wyboru (użyłam jaglanej)
  • nierafinowany olej rzepakowy
  • sól i pieprz
  • świeży szczypiorek

Ziemniaki obierz, zalej wodą i postaw na ogniu.

W międzyczasie pokrój na drobno cebulę, czosnek i pieczarki. Wrzuć razem na rozgrzaną patelnię z olejem, dodaj sól, pieprz oraz natkę pietruszki i smaż na wolnym ogniu około 4 minut mieszając co chwilę. Po tym czasie odłóż farsz do ostudzenia.

Gdy ziemniaki będą miękkie zdejmij garnek z ognia, odcedź i odłóż na bok bez przykrywki tak, by resztki wody mogły swobodnie wyparować.

Po kilku minutach ziemniaki zgnieć na puree z dodatkiem obu rodzajów mąk oraz soli. Odstaw do ostudzenia.

Drewnianą deskę posyp mąką (użyłam mąki kukurydzianej). Uformuj kulę z 3 łyżek ziemniaczanej masy i rozpłaszcz na desce na kształt cienkiego owalu. Na środek nałóż 3-4 łyżeczki farszu pieczarkowego. Za pomocą obu dłoni złącz krawędzie ziemniaczanego dysku tak, by przykryć cały farsz i uformuj zraz w łódeczkę (zdjęcia całego procesu poniżej). Czynności powtarzaj aż do zużycia ziemniaczanej masy.

Podgrzej olej na patelni. Ostrożnie przenieś zrazy na gorący olej. Smaż z obu stron na złoty kolor (około 4 minuty na jednej stronie).

Podawaj z miłością, wegańską śmietaną i świeżym szczypiorkiem :)


Składniki na wegańską śmietanę:
  • 180g silken tofu
  • 2 łyżki nierafinowanego oleju rzepakowego
  • 1 łyżeczka białego octu winnego
  • 3 łyżeczki soku z cytryny
  • 1/2 łyżeczki soli himalajskiej
  • 1/2 łyżeczki cukru trzcinowego
Wszystkie składniki zblenduj razem na jednolitą masę.

Zrazy is a dish of Eastern Slavic cuisines. Word “zrazy” is of polish origin, it means “slices”, “cut pieces” of something like that. Despite its Polish name, for the first time the dish is mentioned in the Lithuanian historical records of 14th century.

Initially, zrazy were meat chops stuffed with eggs and vegetables. Later on, name zrazy started being used for potato cakes stuffed with mushrooms, meat, vegetables. Potato zrazy with meat is the most popular version of this dish in Poland. As you can see, in Russian cuisine the vegetarian version exists.


I served with vegan tofu-based cream. Recipe can be found at the end :)


Ingredients for 8 big cutlets:
  • 1kg potatoes
  • 350g mushrooms
  • 1 medium onion
  • 2 cloves garlic
  • 1 teaspoon fresh parsley
  • 1 tablespoon cornstarch
  • 1 tablespoon flour of your choice (I used millet)
  • unrefined rapeseed oil
  • salt and pepper
  • fresh chives

Peel the potatoes, cover with water and cook.

Meanwhile, finely chop the onion, garlic and mushrooms. Put together on a hot pan with oil, add the salt, pepper and parsley and cook on low heat for about 4 minutes stirring every minute. After this time, set aside to cool.

When potatoes are cooked, drain them and put them back in the hot, empty pot to let them steam off until they look powdery and dry. Let them get cool.

Mash the potatoes with a potato masher with the addition of both types of flour and salt.

Sprinkle wooden desk with flour (I used corn starch). Using your hands form a ball with 3 tablespoons of the potato puree and make a flat disk. At the center, apply 3-4 teaspoon of mushroom stuffing. Using two hands, fold the ends up to completely, cover the mushrooms and shape the cutlet in the little boat (see the pictures of the whole process). Repeat with the rest of potato mixture.

Heat oil in a frying pan. Gently place the cutlets on it. Fry on both sides until golden brown (about 4 minutes on each side).

Serve with love, vegan sour cream and fresh chives :)


Ingredients for the vegan sour cream:
  • 180g silken tofu
  • 2 tablespoons unrefined rapeseed oil
  • 1 teaspoon white wine vinegar
  • 3 teaspoons lemon juice
  • 1/2 teaspoon Himalayan salt
  • 1/2 teaspoon cane sugar

Blend all the ingredients until smooth.
